i dunno about the processed meats in singapore.

but i worked at a processed meats plant during the summer.

i've never seen more hearts and brains and fats on invoices before.

Well the offals are the tasty parts anyway

And they will definately need fats for that nice mouth feel and flavour

A lot of people in Singapore use fats for things like siew mai, charsiew bao etc etc

The containers of fat coming in is amazing. Haha

they won't list things like 'beef hearts' in the ingredients. it's just 'beef' in the ingredients list.

In other news, I've just met the whole gang of profs.

I need sustained low temperatures for my experiments. My profs told me to source for a top-loading freezer with glass sliding doors (the kind used for selling ice-cream at shops). Budget: $1K-$2K.

Anyone got lobang for this?

No idea Fudge but you can try calling up those freezer sellers for food service and sometimes they do have 2nd hand freezers at good prices

I like my meat but these days I find I no longer eat as much meat as before

Would rather eat fish but if you eat out hard to eat good quality fish leh

Most places sell cream dory or really it's sutchi fillet (catfish and not real dory) and I can't find it now but someone on another forum posted it's nutritional value before and it's very very high in levels of fat :x which can explain it's smooth and creamy texture.

I love to eat Saba but eating too much of that is also unhealthy >.<
